Apple, Bacon, and Brie Flatbread

This Apple, Bacon, and Brie Flatbread is an easy fall lunch idea made with Brie cheese, sliced apples, bacon, shallots, baby spinach, pepitas, and a drizzle of balsamic glaze.

Apple season has been so good this year!  I went apple picking with some of my family last month and couldn't get over how good the apples were!  Since then, I've been on a serious apple kick.  I eat at least one a day (usually on its own or with cheese, nuts, or almond butter).  If an apple a day keeps the doctor away, I think I'm in pretty good shape right now!

But since I've been keeping so many apples in the house lately, I wanted to do something other than just eating them as a snack - something other than baking a cake or pie, too.  So I've also been adding them to savory dishes, like salads, apple cider pork tenderloin, and this tasty flatbread recipe.

This flatbread is made with a combination of ingredients that I got through Hungryroot.  I used naan flatbread as my base.  The naan is layered with creamy Brie cheese, sweet-tart Rave apples, bacon, shallots, spinach, and pepitas.  It's a perfect fall lunch idea full of seasonal flavors!

While the bacon and shallots are cooking, the naan is layered with Brie and apples and baked until the Brie is melted and the apples are slightly cooked.  The bacon, shallots, spinach, and pepitas are added on top before serving.  Then, if desired, the flatbread gets a drizzle of balsamic glaze to pull the whole thing together.

Apple, Bacon, and Brie Flatbread

This flatbread recipe is a sweet and salty combo lover's dream!  Not only do you get a mouthful of fall goodness from all of the flavors going on in this recipe, but it also has just the right amount of crunch giving it the perfect balance of textures!

To get started on this flatbread, first we need to cook the bacon.  Take 2 slices and add them to a skillet, cooking until they're to your desired crispness.  Then, transfer to a paper towel to drain.

Give the pan a quick wipe and keep hot.  Add the shallots and cook about 5-8 minutes, or until they're golden and softened.  Keep warm.

Now, preheat the oven to 400ºF and place a flatbread onto a baking sheet.  Add the Brie and sliced apples.  Bake for 10-12 minutes, or until the Brie has melted.

Plate the flatbread and top with the bacon, shallots, baby spinach, and pepitas.  Sprinkle sea salt on top and drizzle with balsamic glaze, if desired.  Serve cut into 4 pieces.

Ingredients
  

  • 2 strips bacon
  • 1 small shallot or half of 1 large shallot sliced thin
  • 1 naan flatbread
  • 1 small Rave apple cored and sliced thin
  • 1/2 cup Brie cheese
  • 1/4 cup baby spinach
  • 2 tbsps. pepitas
  • Coarse sea salt
  • Optional: balsamic glaze

Instructions
 

  • In a medium skillet, cook the bacon over medium heat until desired crispness. Remove from pan and drain.
  • Wipe out pan and add shallot, cooking over medium heat, about 5-8 minutes, or until softened. Keep warm.
  • Preheat to 400 degrees and place flatbread onto a baking sheet.
  • Add Brie and apples onto flatbread and bake 10-12 minutes, or until Brie has melted.
  • Place flatbread onto a plate. Crumble bacon and sprinkle on top along with the shallots, baby spinach, and pepitas.
  • Season with sea salt, drizzle with balsamic vinegar, cut into 4 pieces, and serve.

You can use your favorite apple variety for this recipe.  But I definitely recommend an apple that has a nice, crisp bite to it and a slightly tart flavor profile, like a Jonagold (one of my new favorites).
