Bacon and Chorizo Fried Rice

My brother had given me a couple packages of sliced chorizo.  I love chorizo!  However, I wasn't really sure how to use the slices aside from throwing it on top of pizza like pepperoni.  But one night, I decided to get creative and put together a quick fried rice.

I started throwing things together in a wok - oil, rice, chopped chorizo, bacon, garlic, onion, soy sauce, and a couple eggs.  And, man, did it turn out good!

So good, in fact, that I immediately texted my brother, who then told me that he needed the recipe.  Then, my husband started asking questions about the rice.  He followed up by telling me he was going to have it for breakfast the next day.  A first for him when it comes to eating leftovers!

I froze the rest of the chorizo, but knew that as soon as the package thawed, I'd be making this rice again! It's so easy to make!  Use leftover rice or a package of microwavable rice for a quick and flavorful side dish or entree.

Bacon and Chorizo Fried Rice

You've probably noticed the lack of veggies in this fried rice recipe.  That's because I totally threw this together on a whim.  If you want to balance the rice with a veggie medley, toss in some peas and carrots.  But we think this meaty rice is pretty darn good on its own!

The first thing we're going to do is heat a wok (or a large skillet) over medium heat.  Add the bacon and cook until crispy.  Spoon the bacon onto paper towels.  Then, give the pan a quick wipe.

Add the chorizo, garlic, and onion to the pan.  Cook until the garlic becomes fragrant and the onion has softened.  Spoon the mixture onto another set of paper towels and set aside.

Wipe out the pan completely and add the olive oil.  Lower the heat and add the egg mixture to the pan.  Add a little salt and pepper and scramble the eggs until set.

Now, add the jasmine rice right into the pan.  Don't worry about microwaving it first.  Stir to break it up.  Then, add the chorizo, garlic, onion, and bacon back into the pan.  Stir in the soy sauce.

Serve the fried rice immediately sesame seeds and chopped scallions on top, if desired.

Ingredients
  

  • 3 slices bacon chopped
  • 1/2 cup sliced chorizo chopped
  • 1 large garlic clove minced
  • 1/2 cup red onion chopped
  • 1 tbsp. olive oil
  • 1 whole egg + 1 egg white beaten
  • Salt and pepper to taste
  • 1 - 8.5 oz. jasmine rice microwavable package cooked
  • 1 1/2 tbsp. low sodium soy sauce
  • Optional: sesame seeds chopped scallions, to garnish

Instructions
 

  • Heat a wok or large skillet over medium heat.
  • Add bacon and cook until crispy, about 8 minutes. Remove from skillet and drain on a paper towel.
  • Lightly wipe out the pan and add the chorizo, garlic, and onion. Cook until garlic is fragrant and onion has softened. Remove from heat and set aside on another paper towel.
  • Wipe out the pan completely and add the olive oil.
  • Lower the heat and add the eggs. Season with salt and pepper and scramble until set, about 3-5 minutes.
  • Add the rice to the skillet. Stir to break it up.
  • Add the chorizo, garlic, onion, and bacon back into the pan.
  • Stir in the soy sauce until completely distributed.
  • Serve immediately with sesame seeds and chopped scallions on top, if desired.

Depending on the chorizo you use, you might think this rice is spicy enough.  But if you really want to kick up the heat, drizzle some sriracha or hot chili crisp on top!
