Fall is just a few days away and I am so ready to transition into cozy mode. The nights are now cool and I've been enjoying my fall and winter routine of tea in the evening. But I am really looking forward to those chilly afternoons when I can wrap myself in a warm sweater and make myself a bowl of soup.
There aren't many soups I'd pass up if you handed me a bowl. But I do like to get creative. Especially if that means using up a bunch of ingredients sitting around in the fridge. So I recently decided to make a sausage pizza inspired soup with a tomato based broth.
I used crushed tomatoes and chicken broth to make a "saucy" base. You could use Italian pork sausage for this soup, but I used chicken sausage instead. Then, I added in a bunch of veggies like onion, garlic, bell peppers, and mushrooms.
I finished the soup with a sprinkle of shredded Parmesan cheese! If you're missing the whole pizza crust vibe, serve the soup with a side of garlic bread or breadsticks. I like to dip garlic breadsticks right into my bowl of soup!
Chicken Sausage Pizza Soup
If you add one new soup to your menu this fall and winter, let this be it! It's perfect for pizza lovers and so easy to make! Use precooked chicken sausage so all you have to do is dump the ingredients into a big pot and let the soup simmer!
To start this soup, we're going to add olive oil to a large pot or Dutch oven. Heat it on medium-high heat. Then, add the garlic and onion. Cook until fragrant and translucent, about 3-4 minutes.
Lower the heat to medium and stir in the peppers and mushrooms, cooking about 2-3 minutes, until the veggies begin to soften.
While the veggies are cooking, slice the sausage into 1/4" rounds. Add the sausage to the pot and brown for 2-3 minutes.
Carefully pour in the crushed tomatoes and broth. Stir in the oregano, basil, crushed red pepper (if desired), and season with salt and pepper. Bring pot to a boil, then reduce to a simmer.
Top with a generous sprinkle of shredded Parmesan cheese. Serve with garlic bread or breadsticks on the side.
Chicken Sausage Pizza Soup
Ingredients
- 2 tbsps. olive oil
- 1 cup red onion chopped
- 3 cloves garlic minced
- 2 small-medium bell peppers or 1 large bell pepper chopped
- 2 cups mushrooms sliced thin
- 1 - 11 oz. package fully cooked chicken sausage cut into 1/4" rounds
- 18 oz. crushed tomatoes
- 32 oz. chicken broth or vegetable broth
- 1 tbsp. oregano
- 1/2 tbsp. basil
- Crushed red pepper
- Salt and pepper to taste
- Shredded Parmesan cheese
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add garlic and onion and cook 3-4 minutes, or until fragrant and translucent.
- Lower heat to medium and stir in peppers and mushrooms. Cook 2-3 minutes, or until veggies begin to soften.
- Add sausage and brown 2-3 minutes.
- Carefully pour in crushed tomatoes and broth. Stir in oregano, basil, crushed red pepper. Season with salt and pepper.
- Bring pot to a boil, then reduce to a simmer. Cook at least 30 minutes.
- Top with a generous sprinkle of Parmesan. Serve with garlic bread or breadsticks, if desired.
This recipe is everything I look for in a soup! It's hearty with lots of veggies and full of fresh flavor. This soup will keep for about 4 days in the fridge. But if you want to store a big batch in the freezer, it'll keep for 6 months.
