Easy Chicken Street Tacos

I love to buy rotisserie chicken when they're on sale or just when I can't bear to make dinner that night.  What I love even more is that one of those chickens feeds two of us, plus there are a ton of leftovers!  So we get lunch and another meal out of one chicken.  Once dinner is finished and the chicken has cooled off, I shred the rest of the meat.  I put aside whatever will be eaten the next day for lunch and freeze the rest to use in another meal.

The leftover shredded chicken works great in soup and salads.  But my awesome rotisserie chicken hack also works really well when making quick tacos!  We could probably eat tacos once a week in this house. So last week, I headed to Walmart to buy the ingredients I needed to make chicken street tacos.  These tacos aren't like the crunchy, meat-filled tacos that might come to mind.  They're smaller than the average taco and served in a soft shell.  Traditionally, they're often filled with fish or pork and topped fresh ingredients.

Easy Chicken Street Tacos

This street taco recipe is so easy!  I used small flour tortillas, a bag of Southwestern style chopped salad, shredded rotisserie chicken, and a can of Hunt's Fire Roasted Garlic Diced Tomatoes to make the tacos (something I always keep on hand in the kitchen!).  Then, I whipped up an easy sauce for my tacos using another can of diced tomatoes, fresh lime juice, the packet of ranch dressing that came in my bag of salad, and an avocado.  It turned out to be really tasty so I bottled it up to squeeze it on everything!

Ingredients
  

For the street tacos

  • Small flour tortillas
  • Rotisserie chicken shredded (or leftover shredded chicken, warmed up)
  • Southwestern style chopped salad kit set Ranch dressing packet and other toppings aside
  • 1 14.5 oz can Hunt's Fire Roasted Garlic Diced Tomatoes drained
  • Sliced avocado for topping

For street taco sauce

  • Ranch dressing packet from salad kit
  • Juice from 1 lime
  • 1 avocado
  • 1 14.5 oz can Hunt's Fire Roasted Garlic Diced Tomatoes drained

Instructions
 

For street tacos

  • On a small flour tortilla, add some Southwestern style chopped salad
  • Next, top the salad with shredded chicken and fire roasted tomatoes.
  • Top street tacos with street taco sauce and garnish with an avocado slice.
  • Serve three street tacos to each plate.

For street taco sauce

  • Blend ingredients together until sauce has a smooth consistency. Use as topping for street tacos.
