Last week had me going nonstop!  I thought things would calm down after my trip to Atlantic City, but life thought otherwise.  I spent a lot of time with my sisters, which isn't always easy to do with their schedules (especially when school starts).  It was time well spent.  They came along with me to run errands.  We had fun trying on hats in Urban Outfitters, wandering downtown Westfield, and buying candy at Boscov's in the mall.  I was out to lunch every day last week so this week I'm trying to do a little body detox and eat a lot healthier. 

Once the weekend came, I was beat.  I had a few places to run Saturday morning, but once I got home I was in for the day.  I even managed to nap, which is something I hardly ever do!  The weather was perfect for an afternoon nap and my body was still catching up from the beginning of the week's adventures.  It was a dull, lazy day, but just what I needed!



Yesterday had a similar theme of unwinding (sans the nap).  I was a little more productive in that I baked and made cucumber juice cubes (recipe to come later in the week) and spent some time in the garden.  While my husband trimmed some of our bushes, I gathered vegetables from our garden and watched bees pollinate.  

I thought my husband was out of his mind when he told me it was interesting to watch the bees work, but he was right!  I followed a little bee at first that was flying between my marigolds and peppers.  Then I found the roses buzzing (haha!) with busy bees.  Nature's pretty cool.  We all serve a greater purpose.

Double Chocolate Chip Cookies

One of my "greater purposes" yesterday was making chocolate chip cookies.  I had some milk chocolate chips and white chocolate chips to use up so I thought I'd be nice and make my husband cookies.  After all, he did wake me up to fancy eggs and toast again!  

This cookie recipe is basically a traditional chocolate chip cookie recipe, but with the addition of white chocolate chips.  White chocolate adds some extra sweetness and creamy, vanilla flavor to these cookies that's really delicious!

Double Chocolate Chip Cookies

Double the chocolaty deliciousness with these Double Chocolate Chip Cookies made with white chocolate chips and semi-sweet chocolate chips!

Servings 24

Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 1 cup butter softened
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/2 bag semi-sweet chocolate chips
  • 1/2 bag white chocolate chips

Instructions
 

  • Preheat oven to 375 degrees and line baking sheets with parchment paper.
  • Combine flour, salt, and baking soda in a bowl and set aside.  
  • In a mixing bowl, mix the butter, sugars, vanilla, and eggs until smooth and creamy.  
  • Gradually add the dry ingredients. Then, stir in the chocolate chips.
  • Drop cookie dough in spoonfuls onto baking sheets.  
  • Bake for 8-10 minutes, or until golden brown around the edges.
  • Allow to cool on wire racks.

These cookies were on the money! I don't think I could have made them any better! They were perfectly golden around the edges, soft in the middle, and the two types of chocolate gave them the perfect amount of sweetness and chocolaty flavor!
