Easy Mahi Mahi Tostadas

Cinco de Mayo is just around the corner.  So I've got all things Mexican food on the brain!  And while I'm all for a loaded taco, I really love a good tostada!  Think of tostadas as a taco's delicious cousin.  Instead of a folded tortilla filled with meats, cheeses, and toppings, a tostada is a toasted tortilla served flat and layered with toppings.

Since I was recently craving Mexican food, I took inspiration from fresh fish tacos (one of my favorite spring/summertime eats) and made mahi mahi tostadas instead.  Mahi mahi is a white fish that's mild in flavor with a slight sweetness to it.  It's a firm fish making it perfect for tostadas!

The easiest way to get my hands on some fresh mahi mahi is through Hungryroot.  I grabbed the rest of my tostada ingredients through their grocery delivery as well.  Man, were these tostadas delicious!  And super easy to make, too!

Easy Mahi Mahi Tostadas

If you're looking to switch things up for Taco Tuesday, want to make something special for Cinco de Mayo, or just want an easy Mexican dish to enjoy, whip up these mahi mahi tostadas!

The first thing we need to do is toast up our tortillas.  Use tongs to toast each tortilla over a low flame on the stovetop. Toast just until crispy and the tortilla starts to char.  Then, set aside.

Now, we're going to prepare the mahi mahi.  Pat the filets dry with a paper towel and rub with the taco seasoning.  Heat a tablespoon of oil in a skillet over medium-high heat.  Then, cook the fish 3-4 minutes.  Flip and cook for another 2-3 minutes or until flaky and cooked through.

While the fish is cooking, heat the beans in the microwave in a microwave-safe bowl, covered, for 2-3 minutes or until warm.  Then, we can start layering the tostadas.

Spread the beans onto the toasted tortillas.  Then, divide the lettuce and mahi mahi between the tortillas.

Top with fresh salsa and sour cream.  Serve immediately.

Ingredients
  

  • 2 small 6" whole wheat tortillas
  • 1 tbsp. extra virgin olive oil
  • 2 mahi mahi filets
  • 1 tbsp. taco seasoning
  • 1/2 cup refried red beans
  • 1 cup Romaine lettuce chopped
  • Fresh salsa
  • Sour cream

Instructions
 

  • Over a low flame, use tongs to toast each side of the tortillas until crispy and slightly charred. Set aside.
  • Pat the mahi mahi dry and season with taco seasoning.
  • In a medium skillet, heat olive oil over medium-high heat. Then, place mahi mahi in the skillet.
  • Cook fish for 3-4 minutes. Flip and cook for 2-3 minutes, or until cooked through and flaky.
  • While fish is cooking, heat refried beans in the microwave in a covered microwave-safe bowl for 2-3 minutes, or until warm.
  • Spread each tortilla with the beans.
  • Then, layer the tortillas with lettuce and mahi mahi.
  • Top with fresh salsa, sour cream, and serve.
