Fun in the Sun Fruit Kebabs

Over the weekend, we were at my parents' house for a dinner prepared on the grill.  While we were there, my dad happily said, "It's officially barbecue season!"  The next day, my husband pulled out his handmade wood-burning grill to cook our dinner.  As much as I love spending days at the beach or taking road trips to take on outdoor activities, I'm a homebody at heart.  I love the good food and good company a barbecue provides and I love finding new recipes to make on the grill.

Simple Summertime pleasures take me back to childhood Summer vacations.  We were lucky enough to have a pool to share with friends, but some days there was nothing better than running through a sprinkler.  Mom was always willing to throw us a dollar or two for the ice cream truck that we'd chase down either on foot or on a bike.  We'd snack on fresh fruit salads and drink SunnyD before running around with friends all over again.

Now, as an adult, I still enjoy the unapologetically fun, citrus flavor of SunnyD!  Because it's officially barbecue season, I decided to make grilled fruit kebabs, infused with SunnyD, for me and my husband one night last week for dessert.  I cut up pineapple, banana, strawberries and store-bought pound cake into chunks for our kebabs.

I soaked bamboo skewers in SunnyD instead of water, added my fruit and cake to the skewers, and then brushed SunnyD on my fruit kebabs as they cooked.  I lightly brushed the SunnyD on the pound cake so it didn't get soggy.  Instead, the cake was still nice and toasty, but infused with the flavor of SunnyD!

That's not all!  Once I plated our kebabs, I toasted some shredded coconut to not only sprinkle on top of our kebabs, but mix into SunnyD infused whipped topping!  This was one of the most amazing desserts we've had a in while.  Since the fun in the sun's just beginning, I'm sure I'll be making these all Summer long!

These Fun in the Sun Fruit Kebabs are infused with SunnyD flavor and cooked on the grill for a sunny Summertime dessert!

Ingredients
  

  • pineapple banana, strawberries, or other fruit, cut into chunks
  • 1-2 slices of store bought pound cake cut into chunks
  • 4-6 bamboo skewers
  • 1-2 2.75 oz. bottles of SunnyD
  • 1/2 cup shredded coconut
  • 1 cup whipped topping

Instructions
 

  • Place your bamboo skewers in a large plastic container.
  • Pour SunnyD over skewers, just to cover. Let skewers soak for 30-45 minutes.
  • Alternate fruit and pound cake chunks on your skewers.
  • Heat your grill on medium and pour the rest of your SunnyD bottle into a bowl.
  • Lightly brush your fruit kebabs with SunnyD and place onto the grill.
  • Allow kebabs to cook on each side for 2-3 minutes.
  • On the stovetop, heat shredded coconut over a low flame and toast just until golden brown. Allow to cool.
  • Add whipped topping to a small bowl and mix in 1-2 tablespoons of SunnyD. Add coconut and mix again.
  • Serve kebabs with whipped topping and sprinkle with toasted coconut. Enjoy!
