After making homemade crepes for the first time, I decided to keep our griddle pan hot and make a batch of homemade tortillas. Trust me when I say that I love having soft tortillas in the house! We use them for taco night, as sandwich wraps, to make quick quesadillas, and turn them into chips in the air fryer. But up until recently, I had never made them myself.
The first time I made tortillas, I used a simple recipe using all-purpose flour. Super easy to make! But I like adding whole wheat flour to bread recipes. Whole wheat flour contains more nutrients than all-purpose flour. Plus, it can easily be substituted in any all-purpose flour recipe.
For this recipe, we're using a half whole wheat and half all-purpose flour mixture. Kind of like we did in my Dutch Oven Half Whole Wheat Bread recipe. And all that's added to the flour is a touch of salt, baking powder, olive oil, and water. That's it! It's a simple dough recipe and you can shape and cook the homemade tortillas in minutes!
Half Whole Wheat Homemade Tortillas
Once you start making your bread - any form of bread - it'll be hard for you to go back to store bought. There's such a big difference in taste and texture and the ingredients are pretty minimal.
To start our tortillas, we need to combine the ingredients in a mixing bowl. Combine both flours. Then, stir in the baking powder, salt, water, and oil until a dough forms.
Turn the dough onto a lightly floured surface and knead it about 15 times, or until the dough is smooth. You may need to add more water or flour to achieve the right texture. Just a small amount at a time until your dough is smooth.
Cover the dough and allow it to rest for 10 minutes. Then, turn the dough back onto a lightly floured surface and divide into 8 pieces. Flatten each piece of dough into a 7-inch disc.
Heat an oiled griddle pan or large skillet over medium heat. Then, cook each tortilla for 1-2 minutes on each side, adding more oil if necessary. The tortillas will be golden brown on each side when done.
If you're planning on serving the tortillas right away, serve them warm. If you're making them ahead of time, allow the tortillas to cool completely. Then, store in the fridge or freezer for later.

How to Store Homemade Tortillas
This recipe makes 8 flour tortillas. If you're not using them right away, you can easily store them in the fridge or freezer. I like to let the tortillas cool completely, then wrap them in plastic wrap. Then, I'll keep them in the fridge. The tortillas will last for about a week in the fridge and up to 8 months in the freezer.
