I ain't afraid of no ghost!  Especially when they're in the form of a delicious Halloween cupcake!  I've been super inspired by the DVD release of the new Ghostbusters movie that's coming out tomorrow.  I have to admit that I think I've only seen the original Ghostbusters movie once or twice.  It's been so long since I've seen it that I definitely need to watch it again soon.  But I really cannot wait to check out some of my favorite comedic ladies in the new version of the movie.

The one thing that I do remember about Ghostbusters is Slimer.  I mean, what 80's kid didn't love Ecto Cooler? That neon green color is so synonymous with Slimer!  So I thought it would be fun to create neon green cupcakes topped with white chocolate strawberry "ghosts."  They're a perfect treat for a spooky movie night or Halloween!

These Halloween Ghost Cupcakes are perfect for a spooky movie night or make a tasty treat to serve during your Halloween festivities!

Ingredients
  

  • 1 box white cake mix
  • Green food coloring
  • Halloween cupcake liners
  • White frosting
  • 1 container of strawberries washed and dried
  • 1 bag of white candy melts
  • Candy eyeballs

Instructions
 

  • Preheat oven to 350º and prepare cake mix according to package.
  • Add green food coloring to cake batter, a few drops at a time, until "Slimer" green color is achieved.
  • Distribute batter into cupcake liners and bake 10-12 minutes, or until cooked through and golden brown. Cool completely.
  • While cupcakes are cooling, melt candy melts in a small saucepan over low heat.
  • Stir candy melts until they're completely melted and smooth.
  • Remove from heat and, working quickly, begin dipping strawberries into the chocolate.
  • Set chocolate strawberries on wax paper and add two eyeball candies to each berry.
  • Allow chocolate strawberries to harden completely.
  • Frost the cupcakes with white frosting.
  • Remove the stem and leaves from the strawberries and place berry top-side-down on cupcake to resemble a ghost.
  • Serve and enjoy!

How to Make Halloween Ghost Cupcakes

The only thing scary about these cupcakes is how easy and delicious they are!  It doesn't get easier than some boxed cake mix!  And the hardest part about making those chocolate strawberry ghosts is waiting for the chocolate to harden.

This recipe made 18 cupcakes for me.  Since I had a lot of cupcakes and plenty of sweets in the house already, I decided to bring some of these cupcakes over to my neighbor.  Hunter loves playing with her dog and she's always willing to let him run around her yard.  She's pretty good to us, so I had no problem sharing these sweet treats with her!

Since I turned my entire box of strawberries into sweet, little, chocolate ghosts, I had a few left over.  Keep the stems on the extras and serve them on the side of your cupcakes.  Everyone loves a chocolate-covered strawberry!  Especially when you've put a little Halloween magic into them!
