How do you make Lucky Charms even more magically delicious? Add the cereal to waffle batter and make fun and festive St. Patrick's Day Lucky Charms waffles!

You know what makes me sad? Looking back at Facebook memories and seeing how life was a year ago. We weren't quite into lockdown mode. It was coming, but we were still able to squeeze in some last minute visits with friends and family. Before the pandemic started, we were at my parents' house almost every weekend for dinner. My sister worked about 10 minutes away from my house and spent her lunch break with me at least once a week.
I miss that.
Hopefully things will look different by this time next year. But I've been reflecting on March 2020 a lot. It's almost hard to believe that everything shut down around this time last year. It's so silly, but one of the things I regret is missing out on making these waffles with my sister. During our lunches together, we would often talk about recipes that sounded like a good idea to us. My sister was the guinea pig for a lot of the recipes I made.
Right before we went into quarantine mode, my sister and I were talking about St. Patrick's Day recipes. We talked about making Lucky Charms waffles, but we never got to make them. I recently got a craving for Lucky Charms so I grabbed a box the last time I went food shopping. I've been downing bowls of this magical cereal so I made sure I saved enough to make the waffles. Even though I can't share them with my sister right now, at least I can share the recipe!
Lucky Charms St. Patrick's Day Waffles
Homemade waffles are pretty easy to make. Just mix up the batter, heat up the waffle iron, pour the batter in, and wait for the waffles to turn golden brown! In this case, I'm adding ground up Lucky Charms cereal into the batter, adding a little green food coloring to make them festive, and adding Lucky Charms marshmallows on top!
To whip up the batter, grind up some Lucky Charms cereal (set aside the marshmallows for later) and mix it with flour, salt, baking powder, sugar, an egg, milk, butter, and vanilla. If you want to make them completely festive for St. Patrick's Day, stir in a little green food coloring.
Spray your waffle iron with non-stick cooking spray and heat it on the medium setting. Spoon some of the batter into the waffle iron and close the lid.
Give the waffles about 5 minutes to cook so they're fluffy, but cooked through and slightly golden brown. Then, remove from the waffle iron.
Stack 'em up and serve with a dollop of whipped cream and some Lucky Charms marshmallows on top!
Lucky Charms St. Patrick’s Day Waffles
Ingredients
- 1 cup Lucky Charms cereal marshmallows removed and set aside
- 1 cup flour
- 1/2 tsp. salt
- 1 tbsp. baking powder
- 1 1/2 tbsp. sugar
- 1 egg slightly beaten
- 1 cup milk
- 2 tbsp. butter melted
- 1/2 tsp. pure vanilla extract
- Optional: green food coloring whipped cream, Lucky Charms marshmallows
Instructions
- Grease a waffle maker with non-stick cooking spray and preheat to a medium temperature.
- Use a food processor to grind up the Lucky Charms cereal.
- Add the cereal to a mixing bowl with the flour, baking powder, sugar, egg, milk, butter, and vanilla.
- Mix just until the ingredients are combined.
- Add a couple drops of green food coloring, if desired, and stir to incoporate.
- Spoon the batter into the preheated waffle maker.
- Cook waffles until they start to turn golden brown and are cooked through and fluffy, about 4-5 minutes.
- Serve with whipped cream and Lucky Charms marshmallows.
Notes About This Recipe
- I got two big waffles out of this recipe, but the amount you make will depend on the size of your waffle maker and also how much batter you pour into it. If you need to make more, this recipe can easily be doubled.
- The color of your waffles will depend on the flour you used. If you use all-purpose flour + green food coloring, you should end up with more vibrant green waffles. Since I used whole wheat flour, the green food coloring wasn't as bright.
- Alternative milk and butter works fine in this recipe. I used Chobani Oat Milk and Kite Hill Butter with no problem!
- If you want to add marshmallows into the batter you can, but they will melt while cooking. So if you like the marshmallow crunch, save them as a topping!
