Fresh Mint Infused Limeade

I read a recipe for mint lemonade this morning and immediately wanted to make a pitcher.  I bought Meyer lemons recently, but didn't realize how many I had actually used.  I didn't have enough lemons to make lemonade, but I did have a new bag of limes sitting in the fridge.  So I decided to make mint infused limeade.  When life gives you limes, make limeade instead of lemonade!

As much as I love a cold glass of lemonade on a hot summer day (and this time of year, there's loads of those!), I have to say that this recipe has made me a major fan of limeade!  It's not only a great way to use up those limes sitting in your fridge, but it's seriously refreshing thanks to the the mint leaves!  They give this limeade a nice little cooling effect!

Homemade limeade (and lemonade) is really easy to make.  Plus, you can adjust the amount of sweetness to your liking, unlike the bottled stuff. I prefer lemonade and limeade that's not too sweet, but not completely tart either.

Minted Limeade

This limeade is the perfect balance of sweet, tart, and minty! If you have mint growing like crazy in your garden, this recipe is a great way to put it to use!  Not only do I love the smell of fresh mint, but I like to keep a pot of mint in our garden during the summer to toss into drinks since it's so refreshing!

Add 1 cup of sugar and 2 cups of water to a small pot to make a simple syrup.  Keep stirring until the sugar has dissolved.  Then, remove the simple syrup from the heat.  Once it's cooled down, you can add it to a glass pitcher or carafe.

Now we're going to add the lime.  So juice about 6 or 7 limes and pour the juice into the pitcher with the simple syrup.  Add a small handful of fresh mint leaves (about 10 or so leaves) and use the back of a wooden spoon or a cocktail muddler to muddle the leaves (this will help the leaves release their flavor).

Fill the rest of the pitcher with cold water (about 6-8 cups) and ice cubes.  Give everything a good stir.  At this point, you can adjust the amount of sugar, mint, or water.  Then, pour yourself a refreshing glass or refrigerate for later!

Ingredients
  

To make simple syrup:

  • 1 cup sugar
  • 2 cups water

To make mint limeade:

  • 6-7 limes juiced
  • 10 fresh mint leaves
  • 6-8 cups cold water
  • Ice cubes

Instructions
 

To make simple syrup:

  • Add the sugar and the water to a pot over medium heat.
  • Stir until the sugar has completely dissolved and allow the simple syrup to cool.
  • Once the simple syrup has cooled, pour it into a glass pitcher or carafe.

To make mint limeade:

  • Add the lime juice to the simple syrup, along with the mint leaves.
  • Use the back of a wooden spoon or a cocktail muddler to muddle the mint leaves.
  • Then, fill the rest of the pitcher with the cold water and top it off with ice cubes.
  • Stir everything together and serve or refrigerate for later.

This mint infused limeade is kind of like a non-alcoholic Mojito.  If you want to turn this mint limeade into a real Mojito, just add an ounce of rum and a splash of club soda!
