These Easy Oven Fried Green Tomatoes are a healthier take on this classic Southern appetizer. They're made with tangy, fresh green tomatoes and a crispy, seasoned coating.
The first time I'd ever heard of fried green tomatoes was, of course, the movie Fried Green Tomatoes. After that movie, I wanted to try this classic Southern dish. I mean, if they were good enough for Jessica Tandy, they're good enough for this Jessica, too!
It was at a restaurant down south (during a visit to either North Carolina or Georgia - I can't remember exactly) that I had my first experience with the crispy green tomatoes. Let's just say, this Jersey girl's got an appetite for those Southern fried favorites!
If you're not familiar with fried green tomatoes, it's a tangy and bold dish commonly served as an appetizer or side with a dipping sauce, like remoulade. Kind of sour, kind of savory with a nice crunch!
While I was out picking tomatoes the other day, I pulled a big, ripened tomato a little too hard off the vine. Three little green tomatoes fell off with it. I knew just what to make with them!
Easy Oven Fried Green Tomatoes
While fried green tomatoes are, well, fried in oil to create that crispy outside and juicy inside, I wanted to make them just a touch healthier. So I oven fried them instead. You still get that crunchy outside matched with the flavor of green tomato inside.
Start this recipe by preheating the oven to 425 degrees. Line a large baking sheet with parchment paper.
Cut three green tomatoes into 1/4-1/2 inch slices. Sprinkle the tomatoes with salt and let them sit for 20-30 minutes. This will draw out some of the moisture (this helps keep the tomatoes from getting soggy). Quickly rinse the slices under water and pat dry with a paper towel.
In the meantime, beat an egg in a small bowl and set aside. Place flour in a small, shallow dish. Then, place panko and spices in another shallow dish. Mix the panko and seasonings together to combine.
Once the tomatoes are ready, dredge in flour. Then, dip in egg and coat with panko breadcrumbs. Press the panko onto each slice. Place the tomato slices onto the prepared baking sheet. Season with freshly ground pepper and spray each side with cooking spray.
Bake the tomatoes for about 30 minutes, flipping halfway through cooking. They'll be golden brown once done. Serve immediately with your favorite dipping sauce.

Ingredients
- 3-4 green tomatoes sliced into -1/4-1/2 inch rounds
- 1 large egg
- 1/2 cup flour
- 1 cup panko bread crumbs
- 1/2 tsp. paprika
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. oregano
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat oven to 425 degrees. Line a large baking sheet with parchment paper.
- Sprinkle tomatoes with salt and let sit 20-30 minutes. Then, quickly rinse and pat dry.
- In a small bowl, add egg and beat. Place flour in small, shallow dish. Place panko and spices in another dish. Combine panko and seasonings.
- Dredge tomatoes in flour, shaking off excess. Dip into egg and follow with panko mixture. Press to coat each tomato slice.
- Place tomatoes onto prepared baking sheet and spray each side with cooking spray.
- Bake tomatoes 30 minutes, flipping halfway through. Tomatoes will be golden brown when finished.
- Serve immediately with your favorite dipping sauce.
