If you know my family, then you know we're completely obsessed with pizza! We're all following in my father's footsteps by making our own pizzas at home. You'd think we'd all be sick of pizza by now, but nope! Pizza is one food that I could eat daily. And it's probably because there are so many ways to top it.
Friday night is our weekly pizza night. But if I get a craving for pizza during the week, I usually have some sort of backup, besides pizza dough, to use as my base. Hungryroot recently added Wood Grilled Pizza Crusts to their grocery options. They're the perfect base for a quick pizza and taste like they came right off the grill!
My craving for a prosciutto topped pizza hit in a big way recently. So I added the grilled pizza crusts to my last Hungryroot delivery along with a package of prosciutto and other ingredients - like one of the best ricotta cheeses I've ever tasted - to make a white style pizza.
The plan was to use a grilled pizza crust and spread it with a garlicky ricotta cheese mixture. Then, I'd top the pizza with salty prosciutto, peppery arugula, and add some sliced peaches for a nice, summery touch. It ended up being a totally delicious combination!
Easy Peach, Prosciutto, and Arugula Pizza
If you're looking for a quick summertime pizza, this peach, prosciutto, and arugula pizza is perfection! It has a salty and subtly sweet flavor combination on top of creamy, garlicky ricotta and a crispy grilled pizza crust.
The first thing we're going to do is mix up our ricotta cheese base. Mix 1/4 cup ricotta cheese with 1/2 tsp. garlic paste and 1 tsp. grated Parmesan cheese together. Then, spread the pizza crust with the cheese mixture and season with salt and pepper.
Preheat the oven to 425 degrees. While the oven is heating, slice up the peach and add it to the pizza. Then, tear the prosciutto into pieces and add it to the pizza.
Place the pizza on a pizza stone or baking sheet and bake for about 10 mins, or until the cheese is melty and the crust is crispy on the bottom.
Before cutting the pizza, spread 1/2 cup of arugula on top and, if desired, drizzle with good balsamic vinegar or glaze. Cut into slices and enjoy!
