I have to admit that there are lots of mornings when I’m grabbing for rather unconventional breakfast foods. Maybe you’re like me and pass up cereal boxes for leftovers.  That container of Chinese food, last night’s dinner or, one of my favorites, a slice of delivery pizza.  Convenient, but not the healthiest start to the day!

Despite my appetite for takeout and leftovers, there is one breakfast food that I could easily eat daily – eggs.  Eggs are completely versatile and can be served up in so many ways.   Because I could basically eat pizza for breakfast, lunch and dinner, I decided to create a breakfast scramble with all the flavor of pepperoni pizza, but not the calories or grease.

Using egg whites as a base, I scrambled up grape tomatoes, baby spinach and Hormel Pepperoni Minis. Immediately before serving my scramble, I added bocconcini (fresh mozzarella balls).  It wouldn’t be “pizza” without a little cheese!  The star of this recipe is the Hormel Pepperoni Minis.  These pepperoni minis are perfectly bite-sized and conveniently add the traditional Italian flavor I love to this dish.
