This Pepperoni Pizza Breakfast Scramble made with Hormel Pepperoni Minis is a lighter alternative to a slice of leftover pizza!

I have to admit that there are lots of mornings when I'm grabbing for rather unconventional breakfast foods. Maybe you're like me and pass up cereal boxes for leftovers. That container of Chinese food, last night's dinner or, one of my favorites, a slice of delivery pizza. Convenient, but not the healthiest start to the day!
Despite my appetite for takeout and leftovers, there is one breakfast food that I could easily eat daily - eggs. Eggs are completely versatile and can be served up in so many ways. Because I could basically eat pizza for breakfast, lunch and dinner, I decided to create a breakfast scramble with all the flavor of pepperoni pizza, but not the calories or grease.
Using egg whites as a base, I scrambled up grape tomatoes, baby spinach and Hormel Pepperoni Minis. Immediately before serving my scramble, I added bocconcini (fresh mozzarella balls). It wouldn't be "pizza" without a little cheese! The star of this recipe is the Hormel Pepperoni Minis. These pepperoni minis are perfectly bite-sized and conveniently add the traditional Italian flavor I love to this dish.
Pepperoni Pizza Breakfast Scramble
Ingredients
- 3 egg whites
- 1/2 cup grape tomatoes sliced
- 1 cup baby spinach
- 1/4 cup Hormel Pepperoni Minis
- 2/3 cup bocconcini cut into chunks (or use mini bocconcini)
- fresh basil for garnish (optional)
- salt and pepper
- non-stick cooking spray
Instructions
- Spray a skillet with non-stick cooking spray. Heat on medium.
- Add baby spinach and allow to wilt.
- Once spinach is wilted, add your tomatoes.
- While your tomatoes are cooking, lightly whisk your egg whites. Add salt and pepper.
- Add egg whites to skillet. When eggs are almost set, add your pepperoni minis.
- Continue cooking until eggs are completely set.
- Right before serving, add bocconcini.
- Garnish with fresh basil leaves and enjoy!
This breakfast scramble also makes a great lunch! We're all looking to eat a little healthier now that Springtime is here. This dish is a tasty alternative to a slice (or two) of pepperoni pizza! Although this scramble mimics the taste of a greasy slice of pizza, it's loaded with good for you ingredients to give you a balanced start to the day.
