Pineapple Angel Food Cake

This Pineapple Angel Food Cake is made with just three ingredients, one bowl, and will be the hit of your gatherings.  Make this cake with boxed angel food cake, crushed pineapple, and vanilla extract for an easy, crowd pleasing dessert!

Oh, Pinterest - the website that binds us together one pin at a time.   It's my Google.   When somebody asks me, "Where did you find that?" I usually answer with, "Pinterest."  Not too long ago, someone told me about one of their favorite Pinterest finds.  It was a simple angel food cake made with boxed angel food cake mix, vanilla extract, and crushed pineapple.

The cake sounded so good that I had to try it that weekend.  The smells wafting from the oven while it baked assured me that it was going to be delicious!  Since then, this cake has been made for family gatherings and, most recently, our Easter celebration.  It's a light and fluffy cake with a bright burst of pineapple.

The cake will be nice and fluffy when it comes out of the oven, but upon cooling it will sink down a bit.  Make sure you allow the cake to cool completely before serving.  Then, serve it as is or with Cool Whip on the side to top it with.

Pineapple Angel Food Cake

This cake isn't just delicious, sweet, and slightly tropical tasting thanks to the pineapple.  It's really easy to make, too!  Add all of the ingredients to a mixing bowl, stir, add to a greased baking pan, and bake!  It makes a pretty large cake and it's definitely a crowd pleasing dessert!

So like I said before, all you need is a bowl and a baking pan to make this cake.  Grease a 9"x13" baking pan with non-stick cooking spray and preheat the oven to 350 degrees.

Then, add the angel food cake mix, crushed pineapple (with the juice), and vanilla extract to a mixing bowl.  Mix until combined.  You'll notice the mixture fluff up quite a bit once it's mixed.

Next, pour the mixture into the prepared baking pan.  Spread it out evenly.  Then, place it in the oven.

Bake the cake for 25-35 minutes.  When it's done, it'll be light and fluffy and golden brown.

You can serve it just as it is.  It's delicious on its own.  But I like to mix Cool Whip with a little shredded coconut.  Then, cut the cake into slices and add a dollop of the Cool Whip on top.

Ingredients
  

  • 1 box angel food cake
  • 1 20 oz. can crushed pineapple with juice
  • 1 tsp. vanilla extract
  • 8 oz. Cool Whip optional
  • 1/2 cup shredded coconut optional

Instructions
 

  • Preheat oven to 350 degrees and prepare a 9"x13" baking pan with non-stick cooking spray.
  • In a large mixing bowl, combine cake mix, crushed pineapple, and vanilla extract. Batter will puff up after mixing.
  • Pour mix into prepared baking pan. Bake 25-35 minutes, or until top of cake is golden brown.
  • If desired, mix shredded coconut into container of Cool Whip. Then, slice the cake and serve with Cool Whip for topping.

While I really love the pineapple flavor in this angel food cake, I was told that the cake is also pretty tasty if you use a can of cherries instead. With Mother's Day coming up, this might be a good cake to make for mom.  Try making it with her favorite fruit (make sure you get a can of it with juice) instead of pineapple!
