Pumpkin Spice Overnight Oats

I was never a big fan of oatmeal, but then I tried overnight oats. Holy moly, did my opinion change!  I always thought it was a texture thing that turned me off from a hot bowl of oatmeal.  But now I'm thinking it was simply the temperature.  Weird.  Right?

So I started buying premade cups of overnight oats.  But then I wanted to try other flavors and realized that it would be pretty easy just to make my own overnight oats.

What Are Overnight Oats?

You're probably used to cooking your oatmeal in the microwave or on the stove.  Well, there's none of that with overnight oats.  Raw oats are soaked in milk (the type of milk you use is totally up to you) along with other ingredients like fruits, nuts, and seeds.

The oats absorb all of that liquid and soften overnight.  In the morning, you end up with a delicious breakfast that you can enjoy right out of the fridge!

Pumpkin Spice Overnight Oats

Since it's officially pumpkin season, I decided to make some Pumpkin Spice Overnight Oats.  These overnight oats are made with seasonal flavors and ingredients like pumpkin puree, pumpkin pie spice, chopped nuts, and a drizzle of honey.  It's an easy make-ahead breakfast that's perfect for fall mornings!

Overnight oats are incredibly easy to make!  The first thing you need to do is mix up your ingredients.  So I added oats, pumpkin puree, oat milk, chia seeds, pumpkin pie spice, and honey to a mixing bowl and stirred it all together.

And that's basically it!  Now, you just need to spoon the oat mixture into a glass jar or container.  Keep the jar in the fridge overnight, or for at least 2-4 hours, so the oats can set.

Once the oats have set, you can enjoy them straight from the fridge with some chopped pecans on top, if you desire!

Ingredients
  

  • 1/3 cup old-fashioned rolled oats
  • 1/3 cup pumpkin puree
  • 1/3 cup oat milk or milk of your choice
  • 1 tsp. chia seeds
  • 1/2 tsp. pumpkin pie spice
  • 1 tsp. honey
  • Optional: whipped cream dried cranberries, chopped pecans

Instructions
 

  • In a mixing bowl, mix the oats, pumpkin puree, oat milk, chia seeds, pumpkin pie spice, and honey together.
  • Spoon the oat mixture into a glass jar or container.
  • Keep the oats in the fridge for at least 2-4 hours, or overnight.
  • Once they're set, remove from fridge and top with whipped cream, dried cranberries, or chopped pecans, if desired.
