If you’re anything like me, heading into the kitchen isn’t always just about slaving over a hot stove and preparing a meal.  For me, the kitchen is almost magical.  It’s the place where several ingredients come together to form one scrumptious bite to fill our bellies.  It’s the place where I greet my husband when he comes home from a long day at work.  And some days, it’s even a place where I get down and bust a move to some of my favorite music!

I tend to have certain musical preferences for different activities.  I like to listen to easy-going tunes like country music when I’m working or just hanging outside on the deck.  I like to listen to harder music like rap or metal when I’m working out.  I like something with a good beat and a lot of bass when I’m driving.  But when it comes to my kitchen dance floor, I’m all about some of my guilty pleasures (or not-so-guilty pleasures) and especially 80’s pop! There’s nothing I love more than the great pop royals of the 80’s!

Since it’s unofficially Summer, that means the windows are open, music is filling the air, and concert plans are in the works.  I’ll be dancing in my kitchen, as usual, or singing along to a tune while I’m outside in the backyard.  There are two other things I truly enjoy about Summertime:

  1. Our garden and our berry bushes.
  2. A cold drink in my hand, like a bottle of Coca-Cola Zero™.

Since our raspberry bushes are about to burst, I decided to pay homage to one of my favorite 80’s pop artists – the prince of funky-pop whose “purple reign” continues to live on – by making Raspberry Berets (not “the kind you find in a secondhand store”).  I used a jar of our homemade raspberry jam made with berries from last year’s garden to make these desserts you’ll go “delirious” over!

This recipe is one part cookie, one part jam tart, and a whole lot of yummy raspberry flavor!  They may look a bit fancy, but they’re super easy to put together using packaged ingredients (although you can definitely make your own from scratch!).

  • 1 package sugar cookie mix
  • Raspberry jam
  • Raspberry jello
  • Whipped topping
  • Fresh raspberries and mint, for garnishing


  1. Preheat oven to 350º, or as directed on cookie dough package. Grease a mini muffin pan with non-stick cooking spray.
  2. Prepare cookie dough according to package. Press dough into mini muffin pan making an indentation in the center of the dough.
  3. Bake according to package or until dough is cooked through and slightly golden.
  4. Allow cookie cups to cool completely. Then, fill with raspberry jam.
  5. Prepare whipped topping by stirring jello mix into whipped topping until combined thoroughly. Pipe topping onto jam-filled cookie cups.
  6. Garnish with a fresh raspberry and mint leaf. Serve immediately or refrigerate until serving.

You can find these “Share a Coke and a Song” bottles in the soft drink aisle at ACME (a store just opened near my house and it’s SO convenient!).  Also, look for special “Share a Coke and a Song” displays for these Coca-Cola products. If the lyrics on the bottles weren’t awesome enough, you can use the Shazam app to scan the lyrics and download the original song!
