Rolo Cookie Cups

Rolo Cookie Cups are an easy holiday cookie and a perfect, nut-free treat for friends and family who may have a peanut allergy.

The Christmas countdown is winding down fast and I find myself trying to cram in as much as possible these last few weeks. Just like the past two years, I wasn't planning to do much baking.  But I have a wholesale club box of sugar cookie mix and a lot of baking ingredients to use up.  I'm trying my damnedest to fit some holiday baking in before Christmas!  Especially since I have a nice, new KitchenAid mixer (a great Black Friday buy) on my kitchen counter top to use this year!

Over the years, I've come to learn my family's favorites from boxes of cookies I've shared with them.  One of those favorites is Rolo Cookie Cups. There's a big reason why I try to make these cookies every year.  My nephew has a peanut allergy, therefore he misses out on a lot of homemade holiday treats.  So every year I make him a special nut-free cookie that he gets to enjoy.  Rolos and Betty Crocker Sugar Cookie Mix do not have peanut warnings on the back of them, so they're the perfect combination for a delicious, nut-free holiday treat.

Imagine biting into a sugar cookie with a milk chocolate covered caramel inside!  It's so good!  This recipe will make about two dozen cookies (minus the cookie or two that I might have eaten before storing them in a tin). If you're pressed for time during the next couple of weeks, these cookies are a perfect solution to share homemade holiday treats!

Rolo Cookie Cups

Rolo Cookie Cups are an easy holiday cookie and a perfect, nut-free treat for friends and family who may have a peanut allergy.

Ingredients
  

  • 1 package of Betty Crocker Sugar Cookie Mix
  • 1 bag of Rolos you'll need about 22-24 unwrapped Rolos
  • Mini muffin pan

Instructions
 

  • Preheat oven to 350º.
  • Prepare Sugar Cookie Mix according to package.
  • In an ungreased mini muffin pan, press sugar cookie dough 2/3's of the way down.
  • Bake cookies 18-20 minutes or until edges start to turn golden brown.
  • Place pan on wire rack and press a Rolo into the middle of each cookie cup.
  • Let cookies cool completely before removing them from the pan.
  • To easily remove cookies, take a spoon and loosen cookie around the edges. The cookie should pop right out.
  • Store in an airtight cookie tin for Christmas.
