Spicy Grilled Chipotle Ribs and Potatoes

Summer nights were made for grilling and grilling makes everything taste better!  There’s nothing better than turning off the stove and heading outside to cook.  My husband loves grilling even more now that he has a wood burning grill that he built last Summer.  We’ve been using it as much as we can!
 
When we planned dinner for this past Saturday night, we decided to make chipotle ribs on the grill.  I’ve been on a MAJOR hot and spicy kick lately!  Our fridge is stocked with multiple bottles of hot sauce.  We even have a few different kinds of hot peppers growing in our garden this year!  So it only seemed right to use El Yucateco Chipotle Hot Sauce on our ribs instead of barbecue sauce.
 
Spicy Grilled Chipotle Ribs and Potatoes

El Yucateco Chipotle Hot Sauce is made with naturally smoked chipotle peppers. It’s a perfect match for the smoky flavor our wood burning grill gives our food.  It makes a great alternative to barbecue sauce, not only because of its smoky flavor, but its thick consistency, too. If you really like things hot and spicy, I’d recommend El Yucateco’s Green Habanero and Red Habanero Sauces, as well. All of El Yucateco’s sauces can be found at Lowes Foods.
 
Spicy Grilled Chipotle Ribs and Potatoes

Ingredients

  • Small rack of pork ribs
  • 1/3 bottle of El Yucateco Chipotle Sauce
  • Applewood flavored rub
  • 2 Russet potatoes
  • Toppings: sour cream, fresh cilantro, green onions, El Yucateco Red Habanero Sauce

Instructions

  1. Light your grill and let it get nice and hot over a medium flame.
  2. Prepare your ribs by coating them with a generous amount El Yucateco Chipotle Hot Sauce.
  3. Next, sprinkle on some applewood flavored rub.
  4. Cook your potatoes at the same time you cook your ribs. Throw them on the grill wrapped in foil.
  5. Allow the ribs to slow cook over the fire for about an hour and a half, turning once. Turn your potatoes, as well, when you flip your ribs.
  6. Ribs will be cooked when the meat pulls away from the end of the bones. Potatoes will be done when they've softened.
  7. Serve potatoes, sliced in four, and top with sour cream, fresh cilantro, green onions, and El Yucateco Red Habanero Sauce. Enjoy!

My husband served our spicy little dish with a side of grilled potatoes.  We loaded them with sour cream, green onions from the garden, and drizzled them with El Yucateco Red Habanero Sauce. It was a delicious way to round out our meal! I love when I get a night off from cooking, but even more when it’s a fresh take on a meal we already love!
