Have you ever noticed how the change in seasons inspires a change in our appetites?  Now that warmer days are right around the corner, I want to enjoy meals that are loaded with crunchy vegetables and packed with Springtime flavor.  So I created a fish sandwich that is not only big on taste, but reminds me of fresh fish sandwiches enjoyed at the Jersey shore – with a side of fries, of course!

Most of the ingredients needed to make this sandwich are available in the freezer section.  I headed to my local Walmart to grab all natural Alexia Sweet Potato Fries and Smart Classics Crinkle Cut Fries, plus a few other ingredients needed to complete this meal. Since fries are one of my foodie weaknesses, Alexia’s are a perfect fit! They crisp up nicely in the oven – I’ve honestly never tasted a crunchier sweet potato fry – and their Smart Classics Fries are 98% fat free for guilt-free sides and snacking! Alexia fries make a convenient, versatile side for any meal.

Since one can’t live on fries alone (or can they?), let’s talk about what we’re serving with them. This onion ring topped fish sandwich also has coleslaw on it to give it an additional crunch. Ranch dressing tops it all off for a tangy touch.  The side of Alexia fries are served with a zesty Sriracha ketchup for dipping. It’s a homemade version of some of my favorite boardwalk foods in one, easy-to-make dish!

  • Brioche rolls
  • 2 beer battered fish fillets per roll
  • Onion rings (Alexia makes those, too!)
  • Prepared cole slaw

  • Preferred Alexia fries
  • Sriracha ketchup dipping sauce (see notes below)

  1. Prepare fish fillets and onion rings according to package.
  2. Split open a brioche roll.
  3. Top roll with prepared cole slaw.
  4. Add two fish fillets per roll.
  5. Top fish with 2-3 onion rings.
  6. Drizzle ranch dressing over top and serve with fries and Sriracha ketchup.

To make Sriracha ketchup, mix tomato ketchup with a few drops of Sriracha sauce (as preferred) and stir.

It’s like this sandwich came straight from the boardwalk! Nothing is better than a drippy, filling, probably-going-to-get-some-on-your-shirt sandwich! Especially when it’s served with some crispy fries! Am I right?!? It’s still too cold to head to the beach, but making this dish at home gives you the luxury of knowing what ingredients are going into your meal. Alexia is a brand I can trust to make my meals a “shore” thing!
