I am thoroughly enjoying salad season! I've made pasta salad, potato salad, and crispy green salads. But have you ever eaten salad in a wrap? Since I'm spending a lot more time outdoors these days, I wanted to make a salad that would be easy to tote while wrapped up in a nice, little, edible package!
But what kind of salad would work in a wrap? How about Cobb Salad made with strips of delicious and protein-packed turkey bacon, lettuce, tomatoes, hardboiled eggs, and avocado? All of that fresh salad goodness gets wrapped in a whole wheat tortilla and finished with a drizzle of blue cheese dressing.
While Cobb Salads are typically made with chicken or turkey, as well as bacon, I decided to make things easier and only use strips of Godshall's Real Wood Smoked Original Turkey Bacon in my wrap. I mean, you can't go wrong with bacon!
Godshall's Original Turkey Bacon is made with high quality, US raised turkey thigh and drum meat that's chopped and formed, not mechanically separated (like the other brands).
There's no msg and the bacon is gluten free. With only 45 calories per serving, 75% less fat than pork bacon, and more protein than pork bacon, turkey bacon is a great addition to your summer salads and wraps!
Turkey Bacon Cobb Salad Wrap
Salad season is about to get even yummier with this Turkey Bacon Cobb Salad Wrap! The turkey bacon takes minutes to make and is delicious alongside classic Cobb Salad ingredients! This fresh take on Cobb Salad is sure to become your new favorite lunchtime wrap!
The first thing we need to do is cook our turkey bacon. So heat a skillet over medium heat and place 3-4 turkey bacon slices in the pan and cook, flipping them every so often, until they're nice and browned on each side.
Remove the turkey bacon from the skillet and set aside on paper towels while you prep the rest of the ingredients.
Now we're going to place the tortilla on a plate and start layering our ingredients. First, I add the lettuce. Then, I follow with the sliced tomato, egg, avocado, turkey bacon.
The final touch is a drizzle of blue cheese over the top of the wrap. If you're not a fan of blue cheese, you can add a slather of mayonnaise or Dijon mustard instead.
The last thing we need to do is wrap everything up. Cut the wrap in half, if desired, and dig in!
