Do you remember that omelet breakfast sandwich hack going around social media about a year ago? Last year, I decided to try it using a tortilla instead of toast. I ended up making the easiest and tastiest breakfast quesadilla!
The first couple quesadillas I made were with egg, cheese, and bacon. But I found that just egg and cheese with a little fresh salsa on top became my favorite way to make this breakfast hack!
Now that I'm in post-holiday detox mode, I've been trying to add more plant-based foods into my diet. So I figured it was a good time to pull out this recipe hack again and try it with some vegan ingredients from Hungryroot.
During one of my last Hungryroot deliveries, I made sure to order a few easy, vegan breakfast options like cereal with oat milk and bagels. But I also included ingredients to make these breakfast quesadillas.
So I ordered a package of Organic White Flour Tortillas, Plant-Based Liquid Eggs, and Mature Vegan Cheddar Slices. I already had the fresh salsa on hand, but you can grab a container through Hungryroot, as well.
Easy Vegan Breakfast Quesadilla Hack
If you need a little more than just vegan eggs and cheese inside your quesadilla, you can throw in some sautéed spinach or a plant-based protein. I found that this was satisfying enough with a spoonful or two of fresh salsa on top!
The first thing we need to do is add olive oil or a little plant-based butter to a pan over medium heat. If using butter, allow it to melt completely. Then, add the eggs to the pan and season with salt and pepper.
Add the tortilla on top of the eggs and allow the eggs to cook for about 1-2 minutes.
Now, we're going to carefully flip the tortilla over and add the cheese slice on top.
Fold the tortilla over and remove it from the pan. It should be golden brown and crispy.
Then, all that's left to do is cut it in half and enjoy! If desired, add a little fresh salsa on top. Hot sauce is good, too!
Easy Vegan Breakfast Quesadilla Hack
Ingredients
- 1 tbsp. olive oil or plant-based butter
- 1/2 cup JUST Egg Plant-Based Liquid Eggs
- 1 Organic White Flour Tortilla
- 1 Mature Vegan Cheddar Slice
- Salt and pepper to taste
- Optional: fresh salsa for topping
Instructions
- Add olive oil, or plant-based butter, in a pan over medium heat. If using butter, let it melt completely.
- Then, add the plant-based eggs to the pan and season with salt and pepper.
- Place the tortilla on top of the eggs. Allow the eggs to cook for 1-2 minutes, or until set.
- Use a spatula to carefully flip the tortilla over. Then, add the cheese slice on top.
- Fold tortilla over and remove it from pan. If tortilla isn't crispy and golden brown and cheese hasn't melted yet, allow it to sit for another 1-2 minutes.
- Cut the tortilla in half and serve with fresh salsa on top, if desired.
