There's no denying that summer fruit is far more superior than any other season's. And we're about to reach the height of summer fruit season. There is going to be so much watermelon in our house!
Watermelon is so good as it is, but there are so many other ways to enjoy it. I like it with a sprinkle of Tajin or tossed into a salad with mint and feta cheese.
I started thinking of other ways - specifically other salads - I could use watermelon. So I came up with a simple and refreshing summer fruit salad with the perfect balance of sweet and savory flavors.
This fruit salad combines sweet watermelon with blueberries, cherries, fresh mozzarella, and basil. Not only is the flavor combination outstanding, but the color combo makes it a patriotic treat for the 4th of July. No matter the occasion, this fruit salad is perfect for summer snacking or an easy - and healthy - dessert!
Watermelon Fruit Salad with Basil and Mozzarella
While this fruit salad is pretty on its own for the 4th, you could really boost the patriotic theme by using a star cookie cutter to cut the watermelon. I did that when I made my Star Spangled 4th of July Fruit Salad.
The first step in making this salad is prepping the fruit. I cut watermelon into good-sized chunks (not too big or small), washed my blueberries, and cut cherries in half, removing the pits. Once all the fruit was prepped, I placed it in a mixing bowl.
Next, I picked some fresh basil from our garden, rinsed it, and chopped it. Even though I have mint growing in our garden, I think I'm starting to prefer basil with my fruit. That herbal earthy goodness works really well with fruit.
Once the basil was chopped, I cut fresh mozzarella balls in half. I used ciliegine-sized mozzarella. It's such a good size for salads. When everything was prepped, I added it the bowl of fruit and tossed to combine.
And that's it! Spoon it into a serving dish and serve immediately! You could add a drizzle of balsamic glaze or honey on top, but it honestly doesn't need it.
Watermelon Fruit Salad with Basil and Mozzarella
Ingredients
- 3 cups watermelon chunks
- 1/2 cup blueberries
- 3/4 cup cherries pitted and halved
- 1/2 cup fresh mozzarella balls ciliegine
- 3 tbsp. fresh basil chopped
Instructions
- Place the watermelon, blueberries, and cherries in a bowl. Mix.
- Add the mozzarella and basil. Mix.
- Serve immediately or chill in the fridge.
This fruit salad just tastes like summer to me! I could honestly eat it for breakfast or lunch and be completely satisfied. But it really does make an excellent snack or dessert for summer gatherings.
