White Pizza Dip with Broccoli

I will fully admit that I have an unhealthy relationship with chips, crackers, and dips.  Especially ooey-gooey hot dips!  So when I find myself in the mood to make a delicious dip, I make sure that I have a healthier dipper in the house.  I have a couple favorites, but one of them is definitely Crunchmaster crackers.  Their multigrain varieties often find their way into our house.

So I was pleasantly surprised when they sent me a variety of their products to try (THANK YOU, Crunchmaster!).  And having a bunch of tasty, new crackers in the house meant making some sort of dip.  Right?  I've wanted to make a pizza dip for a while.  But instead of a classic tomato and cheese pizza dip, I decided to make a white pizza dip.

I love a good slice of cheesy, garlicky white pizza!  Especially when there's broccoli on top cause I'm totally a veggie pizza girl!  But unlike a regular pizza, I can only eat one slice of this heavier pie.

Now how about turning it into a dip?  Well, you'll still get that ooey-gooey cheesiness and garlickey goodness without the crust.  However, you can consider the crust, in this matter, whatever you choose to dip into it.  For us, it's wholesome, gluten-free Crunchmaster crackers!

White Pizza Dip with Broccoli

This White Pizza Dip is reminiscent of hot and cheesy white pizza slices with the addition of broccoli.  The broccoli gets chopped into bite-sized pieces and mixed into a creamy cheese dip.  It literally tastes like a gooey slice of white pizza with broccoli!

To start this dip, we need to preheat the oven to 350 degrees.  Spray a 9-inch pie plate or baking dish with nonstick cooking spray.  Now, we're going to mix the Neufchatel cheese and ricotta cheese together until it's smooth and combined.

Next, we're going to add 1 cup of shredded mozzarella Parmesan cheese, garlic powder, Italian seasoning, red pepper flakes, and broccoli to the cheese mixture.  Mix it up.

Spread all of that cheesy goodness into your prepared plate.  Before popping it in the oven, add 1/4 cup of shredded mozzarella on top.  You could even add a little more broccoli on top for a little more added color.

Now, pop the dip in the oven and bake it for 25 minutes, or until it's all melty and bubbling.  Let it cool for a couple minutes before serving (no one likes a pizza burn!) and serve with your favorite crackers.

Ingredients
  

  • 8 oz. Neufchatel cheese softened
  • 1/2 cup part-skim ricotta cheese
  • 1 cup shredded mozzarella cheese + 1/4 cup
  • 2 1/2 tbsp. grated Parmesan cheese
  • 1 tsp. garlic powder
  • 1/2 tsp. Italian seasoning
  • Pinch red pepper flakes
  • 1 cup frozen broccoli thawed and chopped into small pieces

Instructions
 

  • Preheat oven 350 degrees and spray a 9-inch pie plate or round dish with nonstick cooking spray.
  • In a medium mixing bowl, mix the Neufchatel and ricotta cheeses together until combined.
  • Add 1 cup of mozzarella, Parmesan cheese, garlic powder, Italian seasoning, red pepper flakes, and broccoli to cheese mixture. Mix.
  • Spread the mixture into the prepared dish and sprinkle the 1/4 cup of mozzarella on top.
  • Bake for 25-30 or until the cheese starts bubbling.
  • For a nice golden top, place the dip under the broiler for 1-2 minutes. Then, serve with crackers.

Notes

If you can't find Neufchatel cheese, use cream cheese instead.  I wanted to lower the fat in this dip by using Neufchatel cheese.  You could also use whole milk ricotta, if preferred.

Since this is a heavier dip, make sure you have a sturdy cracker to dip into it.  Again, I totally recommend Crunchmaster crackers.  Not only are they delicious and made with better-for-you ingredients, they hold up under the weight of hot dips like this!
