Apple Pecan Quinoa Breakfast Bowl

Ingredients

  • 1/2 cup rainbow quinoa cooked
  • 2 tsp. Stevia sweetener
  • 1 small green apple diced
  • Ground cinnamon
  • 1/4 cup Wholesome Pantry Organic Pecan Halves
  • 1 generous tbsp. Wholesome Pantry Almond Butter

Instructions

  • Cook the quinoa as directed. Allow quinoa to cool and place 1/2 cup into a small bowl.
  • Stir in 1 tsp. of Stevia sweetener.
  • Add a small amount of water to the bottom of a small saucepan, basically to just cover the bottom.
  • Heat the water over medium and add the diced apples.
  • Sprinkle a little ground cinnamon plus the other teaspoon of Stevia sweetener over the apples. Stir to combine and cook just until softened. Remove from heat.
  • Begin assembling your quinoa bowl. Add Wholesome Pantry Organic Pecan Halves to one side of the quinoa bowl.
  • Then, add the cooked apples into the other side of the bowl.
  • Spoon Wholesome Pantry Almond Butter down the middle of the bowl and serve!
