Ingredients
1/2box bow tie pasta
1/2cupred onionchopped
1cupgrape tomatoeshalved
1cupfresh mozzarella ballshalved
1cupbaby portobello mushroomssliced
1tbsp.fresh basilchopped
Zest of one small lemon
3/4cupbalsamic vinegar
1/4cupextra virgin olive oil
Juice of 1 small lemon
Salt and pepperto taste
Instructions
Cook pasta as directed. Once al dente, drain and rinse with cold water. Allow to cool completely and then pour pasta into a large bowl.
Mix in chopped red onion, tomatoes, mozzarella, mushrooms, and fresh basil.
Zest in one small lemon.
In a small bowl, stir balsamic vinegar, olive oil, and lemon juice together.
