Ingredients
For the pasta salad:
12ouncespastasuch as rotini, bow tie, or penne
6-8slicescooked baconcrumbled
2cupsgrape tomatoeshalved
2cupsarugula
1/4cupred onionchopped
For the dressing:
1/2cupmayonnaise
2tbsps.lemon juice
2tsp.lemon zest
1tsp.Dijon mustard
1tsp.garlic powder
Salt and pepperto taste
Instructions
Bring a pot of salted water to boil. Add the pasta and cook until al dente, about 10 minutes, or as instructed on package. Drain, rinse with cold water, and set aside.
In a small mixing bowl, whisk the mayonnaise, lemon juice, lemon zest, Dijon mustard, garlic powder, and salt and pepper together.
Add the cooked pasta, bacon, grape tomatoes, arugula, and red onion to a large mixing bowl. Toss to combine.
Pour the dressing over the pasta salad and mix. Chill in the fridge for 20-30 minutes to allow the flavors to come together. Then, serve with extra arugula and crumbled bacon on top, if desired.
