Caramel Apple Pie

This almost homemade caramel apple pie is an easy and delicious way to use up those apples sitting in your fridge!

Ingredients

  • Refrigerated pie crust
  • 6-8 Granny Smith apples
  • 1 1/2 cup light brown sugar packed
  • 1 tsp. vanilla extract
  • 1/2 cup unsalted butter
  • 1/2 heavy cream
  • Ground cinnamon
  • Pinch of salt

Instructions

  • Heat oven according to instructions on your box of pie crust.
  • Place one pie crust on the bottom of a pie dish. Set aside.
  • Peel apples and slice into thin slices. Set aside.
  • In a saucepan over medium heat, melt butter.
  • Add brown sugar, vanilla, heavy cream, a pinch of salt, and a sprinkle of cinnamon. Combine.
  • Mix in apple slices and bring caramel mixture to a boil.
  • Lower heat and continue to stir for a few more minutes or until caramel sauce begins to thicken.
  • Use a slotted spoon to spoon apples into the pie dish. Add more caramel sauce, as needed.
  • Top pie with another pie crust and poke holes in the top with a fork to vent.
  • Bake pie according to pie crust instructions, or until crust is golden brown.
  • Allow pie to cool and serve with additional caramel sauce and vanilla ice cream.

Notes

Refrigerate leftover caramel sauce and use for dipping! It will be infused with the flavor of the apples that were cooked down in it!
