Cheesy Mexican Taco Frittata
This Cheesy Mexican Taco Frittata is a great way to use up leftovers from taco night. This tasty frittata is made with taco meat, shredded cheddar, and served with lots of taco toppings! Serve it for breakfast, lunch, or dinner!

1 tbsp. olive oil 1/4 cup red onion chopped 1 cup taco meat 6 large eggs 1/4 cup milk 1 cup shredded cheddar cheese Salt and pepper to taste Optional: salsa sour cream, avocado, chopped scallions, tortilla strips, sliced jalapeƱos
Preheat the oven to 400 degrees.
Heat olive oil in a cast iron skillet over medium heat.
Add the onions to the skillet and cook until softened. Then, add the taco meat to warm it up.
While onions and taco meat are cooking, whisk eggs and milk together in a mixing bowl. Season with salt and pepper.
Add the eggs to the skillet and allow them to cook for about 5 minutes.
Once the eggs begin to set, sprinkle the cheddar cheese on top.
Then, place the skillet into the oven and cook for 15-18 minutes, or until the eggs have completely set.
Remove the frittata from the oven and allow to cool for a few minutes before cutting into slices.
Serve with your favorite taco toppings like salsa, sour cream, avocado, chopped scallions, tortilla strips, or sliced jalapeƱos.
