Prepare a couple baking sheets with wax paper and set aside.
Cut the apples into 1/2 inch slices. Then, cut the rest of the apple into wedges.
Place the sliced apples into a bowl of lemon water and set aside.
Add the semi-sweet chocolate chips and coconut oil into a small pot and heat the pot to low.
Stir continuously until the chocolate is melted. Remove from heat.
Remove the apple slices from the lemon water and pat dry.
Cut sliced apples into hearts with cookie cutters. Carefully insert lollipop sticks into the apples.
Dip apples into chocolate making sure to coat apples completely. Allow excess chocolate to drip back into pot. Place apples onto prepared baking sheets.
Place the baking sheets into the fridge and let the chocolate set for about 10 minutes.
Add the white chocolate chips to another small pot and heat over low. Stir continuously until melted.
Drizzle the apples with white chocolate and add sprinkles. Place the apples back into the fridge until the white chocolate sets.
Serve the chocolate covered apples immediately or store in an airtight container in the fridge.
