Easy Vegan Potato Salad

This Easy Vegan Potato Salad is mayo and egg-free and made with fresh ingredients like green onions and bell pepper. It’s a delicious plant-based side dish!

Ingredients

  • 5 medium potatoes peeled and cubed
  • 1 cup Vegenaise
  • 2 tbsp. apple cider vinegar or white vinegar
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1 tsp. sugar
  • 3/4 cup green onion chopped
  • 1/2 cup red bell pepper chopped
  • Chopped parsley to garnish

Instructions

  • Add the potatoes to a medium pot and cover with water.
  • Heat the pot over medium-high heat and bring to a boil. Then, lower the heat and cook the potatoes until they are fork-tender, about 10 minutes.
  • Drain the potatoes and allow to cool slightly.
  • Add the potatoes, green onion, and peppers to a large bowl.
  • In a small bowl, add Vegenaise, vinegar, salt, pepper, and sugar. Combine. Stir Vegenaise mixture into bowl of potatoes, green onion, and peppers.
  • Chill the potato salad until ready to serve and garnish with chopped parsley, if desired.
