Greek Orzo Pasta Salad

Greek inspired ingredients and flavors turn simple orzo pasta into a delicious and fresh pasta salad that’s a perfect side dish for summer!

Ingredients

For the pasta salad

  • 1 cup uncooked orzo
  • 1 small cucumber seeded and chopped
  • 1 cup grape tomatoes sliced
  • 1-2 small pepperoncinis or other mild pepper, seeded and chopped
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste

For the dressing

  • 1 medium lemon juiced
  • 1 tbsp. extra virgin olive oil
  • 1/2 cup white vinegar
  • 1 small sprig fresh mint
  • 2 sprigs fresh thyme

Instructions

  • Cook orzo according to package. Drain, rinse with cold water, and set aside to cool completely.
  • In a medium bowl, combine cucumber, tomato, and pepperoncini.
  • Add orzo to the bowl.
  • In a small bowl, mix together dressing ingredients.
  • Pour dressing onto bowl with pasta and combine.
  • Season pasta salad with salt and pepper.
  • Add crumbled feta just before serving. Serve with more feta, if desired.
  • Enjoy pasta salad cold or at room temperature.
  • Store in a sealed container in the fridge for 3-5 days.
