Greek Yogurt Blueberry Muffins

These Greek Yogurt Blueberry Muffins are bursting with fresh blueberries in every bite while Greek yogurt keeps them moist like they just came out of the oven!

Ingredients

  • 1 1/2 sticks unsalted butter room temperature
  • 1 1/2 cups sugar
  • 3 large eggs
  • 1 1/2 tsp. vanilla extract
  • 1 cup plain Greek yogurt
  • 1/4 cup milk
  • 2 1/2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 2 cups fresh blueberries

Instructions

  • Preheat the oven to 350 degrees and prepare muffin pans with muffin liners.
  • In the bowl of an electric mixer, cream the butter and sugar together until it's light and fluffy.
  • Add the eggs one at a time and mix just until combined.
  • Then, add the vanilla, Greek yogurt, and milk.
  • In a separate bowl, mix the flour, baking powder, baking soda, and salt together.
  • Gradually add the flour mixture to the wet ingredients and beat just until combined. Fold in the blueberries.
  • Then, scoop the batter into the muffin pans, filling each cup just over the top.
  • Bake the muffins for 30 minutes, or until the muffins are golden brown on top and a toothpick comes out clean from the center.
