Grilled Corn Salad with Basil and Chives
This Grilled Corn Salad is a sweet and buttery, simple summer salad made on the grill and served with a touch of peppery basil and oniony chives.

- 3-4 ears of corn husked
- 4 tbsp. unsalted butter divided
- 1/4 cup fresh chives chopped
- 1/4 cup fresh basil chopped
- Salt and pepper to taste
Place each ear of corn onto a sheet of foil.
Spread a tablespoon of butter onto each ear of corn and wrap it up to make a tight foil packet.
Heat the grill on medium-high heat and grill the corn for 8-10 minutes, turning halfway.
Remove corn from grill and allow to cool slightly. Carefully cut the corn off of the cob and place into a bowl.
Toss the corn, basil, and chives together. Season with salt and pepper.
Serve with an extra sprinkle of fresh basil and chives, if desired.
