Hearty steak and potatoes are turned into a lighter dish for summer with this Grilled Steak and Potato Salad recipe full of classic flavor!

Ingredients
For the salad:
2tbsp.extra virgin olive oil
1cupcreamer potatoeshalved
1/4cupred onionsliced
1 1/2cupsbaby bella mushroomssliced
2cupsgrape tomatoes
1strip steak
3cupsRomaine lettucechopped
Salt and pepperto taste
For the dressing:
2tbsp.extra virgin olive oil
1lemonjuiced
1small garlic clove
1 1/2tbsp.fresh herbslike basil, oregano, and parsley

Instructions
For the salad:
Preheat grill to medium heat. Brush veggies with olive oil.
Add potatoes, sliced side down, onions, mushrooms, and tomatoes to grill (or use a grill basket).
Cook 10 minutes, or until potatoes, onions, and mushrooms softened, and tomatoes start to burst.
Season the steak with salt and pepper and place on the grill. For a medium cook, grill for about 5-7 minutes on each side. Allow the steak to rest for a few minutes.
Serve sliced steak and veggies over Romaine lettuce. Dress with lemon-herb dressing.
For the dressing:
Blend oil, lemon juice, garlic, herbs, and salt and pepper until garlic and herbs are chopped and ingredients are incorporated.
