Grilled Watermelon & Feta Salad

When it’s just too hot outside to crave anything heavy, whip up this refreshing Grilled Watermelon & Feta Salad in just minutes!

Ingredients

  • 6 watermelon slices
  • 1-2 tbsp. extra virgin olive oil
  • 1 lime halved
  • Sea salt to taste
  • Crumbled goat cheese
  • 1 tbsp. fresh mint chopped
  • Optional: cayenne pepper

Instructions

  • Preheat grill to medium-high heat.
  • Lightly brush the watermelon slices with olive oil.
  • Once the grill is hot, place the watermelon on the grill.
  • Cook 2-3 minutes. Flip and cook for another 2-3 minutes.
  • Remove from grill and allow to cool.
  • Cut watermelon into cubes and divide evenly between two bowls.
  • Squeeze half of a lime onto each bowl and season with a little sea salt and cayenne pepper, if desired.
  • Sprinkle crumbled goat cheese on top of each bowl and finish with fresh mint.
  • Serve immediately or chill before serving.
