Italian Sun-Dried Tomato and Roasted Garlic Hummus

Classic hummus goes Italian with this Sun-Dried Tomato and Roasted Garlic Hummus recipe. It’s made with an entire bulb of garlic and other big Italian flavors like sun-dried tomatoes and Parmesan cheese!

Ingredients

  • 1 can chickpeas rinsed and drained
  • 2 tbsp. tahini
  • Juice of 1 lemon
  • 1 small garlic bulb roasted
  • 1 tbsp. extra virgin olive oil
  • 1/3 cup sun-dried tomatoes chopped
  • 1/4 cup shredded Parmesan cheese
  • 1/2 tsp. Italian seasoning
  • Water
  • Salt and pepper to taste
  • Optional: crushed red pepper flakes
  • Veggies and/or pita chips for dipping

Instructions

  • Add chickpeas, tahini, lemon juice, roasted garlic, and olive oil to a food processor or blender.
  • Pulse until smooth. Add a tablespoon of water at a time to help move the hummus along.
  • Once the hummus is smooth and creamy, add sun-dried tomatoes, Parmesan cheese, and Italian seasonings.
  • Pulse again until the rest of the ingredients are fully incorporated.
  • Spoon hummus into a bowl and drizzle with olive oil. Season with salt and pepper. Serve with veggies or pita chips.
