Leftover Turkey and Gravy Pasta Bake with Baby Spinach

  • 1 large skillet

Ingredients

  • 8 oz. penne pasta
  • 2 tbsp. salted butter
  • 1/2 cup onion chopped
  • 2 cloves garlic minced or grated
  • 2 cups cooked turkey chopped
  • 1 1/2 cups leftover turkey gravy
  • 1 cup baby spinach roughly chopped or torn
  • 1/2 tsp. poultry seasoning
  • 1 cup shredded mozzarella
  • Salt and pepper to taste
  • 1/2 cup crispy fried onions

Instructions

  • Heat oven to 375 degrees. Grease a medium baking dish.
  • Cook pasta according to package, or until al dente, about 8-10 minutes. Drain and set aside.
  • In a large skillet, melt butter over medium heat. Add onion and cook 3-4 minutes. Then, stir in garlic and cook about 1 minute more.
  • Add turkey, gravy, and seasonings. If gravy consistency is too thick, gradually add milk, water, or white wine to thin it out. Stir in spinach and cook 1-2 minutes until wilted. Season with salt and pepper to taste.
  • Add the cooked pasta to the skillet and stir to incorporate.
  • Transfer mixture into baking dish. Sprinkle mozzarella cheese on top and finish with crispy fried onions.
  • Bake 20-25 minutes, or until bubbly, cheese is melted, and lightly browned on top.
  • Rest 3-5 minutes before serving.
