Ingredients
8oz.penne pasta
2tbsp.salted butter
1/2cuponionchopped
2clovesgarlicminced or grated
2cupscooked turkeychopped
1 1/2cupsleftover turkey gravy
1cupbaby spinachroughly chopped or torn
1/2tsp.poultry seasoning
1cupshredded mozzarella
Salt and pepperto taste
1/2cupcrispy fried onions
Instructions
Heat oven to 375 degrees. Grease a medium baking dish.
Cook pasta according to package, or until al dente, about 8-10 minutes. Drain and set aside.
In a large skillet, melt butter over medium heat. Add onion and cook 3-4 minutes. Then, stir in garlic and cook about 1 minute more.
Add turkey, gravy, and seasonings. If gravy consistency is too thick, gradually add milk, water, or white wine to thin it out. Stir in spinach and cook 1-2 minutes until wilted. Season with salt and pepper to taste.
Add the cooked pasta to the skillet and stir to incorporate.
Transfer mixture into baking dish. Sprinkle mozzarella cheese on top and finish with crispy fried onions.
Bake 20-25 minutes, or until bubbly, cheese is melted, and lightly browned on top.
