Lemon Cream Cheese Cake

Recipe adapted from BettyCrocker.com. This Easy Lemon Cream Cheese Cake starts with a box of yellow cake mix and lots of lemon flavor. It’s a perfect dessert for all of your springtime celebrations!

Ingredients

For the cake:

  • 1 box yellow cake mix
  • 1 cup milk
  • 3 oz. cream cheese softened
  • Grated lemon peel from 1 lemon
  • Juice of 1 lemon
  • 3 eggs

For the glaze:

  • 2 cups confectioner's sugar
  • Juice of 1 lemon

Instructions

For the cake:

  • Preheat oven to 375 degrees and generously grease a bundt pan with non-stick cooking spray.
  • In a large bowl, beat all of the ingredients together until completely combined and pour into bundt pan.
  • Bake cake for 40-45 minutes or until a toothpick comes out clean when inserted into the cake.
  • Allow cake to cool 15 minutes. Carefully remove from pan and place on a serving plate or cake stand.
  • Allow cake to cool completely for about an hour longer.

For the glaze:

  • Beat the confectioner's sugar and lemon juice together until a thick glaze has formed.
  • Using a spoon, drizzle glaze over top of the cake.
  • Allow the glaze to set, then serve.

Notes

Not a fan of glaze? Serve this cake with powdered sugar on top instead!
