Maple Bacon and Brie Potato Bake

This Maple Bacon and Brie Potato Bake is a decadent and creamy cheese topped potato dish with a sprinkle of maple flavored bacon in every bite!

Ingredients

For the potatoes:

  • 1 pound creamer potatoes or other small baby potato
  • 1 cup bacon crumbles or finely chopped bacon
  • 2 tbsp. maple syrup
  • 1 clove garlic minced
  • 1/2 cup onion chopped
  • 1 tsp. fresh thyme
  • Salt and pepper to taste

For the brie sauce:

  • 1 tbsp. butter
  • 1 tbsp. flour
  • 1/2 cup heavy cream
  • 4 oz brie rind removed
  • Salt and pepper to taste

Instructions

For the potatoes:

  • Boil the potatoes in a pot of salted water for 10 minutes, or until fork tender. Drain and set aside to cool.
  • Preheat oven to 350 degrees. Spray a casserole dish with non-stick cooking spray and set aside.
  • Add the bacon, garlic, and onion to a skillet. Cook about 5-8 minutes, or until the bacon is crispy. Drain.
  • Stir in the maple syrup and thyme, cooking for another minute and set aside.
  • Slice the potatoes in halve and place in the prepared casserole dish.
  • Add half of the bacon over the potatoes. Then, prepare the sauce.

For the brie sauce:

  • In a small saucepan, melt the butter over medium heat.
  • Whisk in the flour.
  • Gradually whisk in the heavy cream.
  • Add the brie and lower the heat.
  • Season with salt and pepper and stir until the sauce becomes thick.
  • Remove from heat and pour over the potatoes.
  • Sprinkle the other half of the crumbled bacon on top.
  • Bake the potato dish for 30-40 minutes, or until the potatoes just start to turn golden brown.
  • Serve immediately.
