Boil the potatoes in a pot of salted water for 10 minutes, or until fork tender. Drain and set aside to cool.
Preheat oven to 350 degrees. Spray a casserole dish with non-stick cooking spray and set aside.
Add the bacon, garlic, and onion to a skillet. Cook about 5-8 minutes, or until the bacon is crispy. Drain.
Stir in the maple syrup and thyme, cooking for another minute and set aside.
Slice the potatoes in halve and place in the prepared casserole dish.
Add half of the bacon over the potatoes. Then, prepare the sauce.
