Mojo Marinated Shrimp Skewers

This Mojo Marinated Shrimp Skewers recipe features bright citrus flavors, lots of garlic, and the slightest bite of jalapeño in a marinade that’s perfect for grilling shrimp and veggies!

Ingredients

For the mojo marinade:

  • 6 cloves of garlic minced or grated
  • 1 lime juiced
  • 1 lemon juiced
  • 1 large orange juiced
  • 1/4 cup olive oil
  • 1/2 tsp. fresh oregano chopped
  • 1/4 tsp. ground cumin
  • 1 jalapeño sliced
  • Salt and pepper to taste

For the shrimp skewers:

  • 1 pound or 20 large peeled and deveined shrimp
  • 1 small yellow squash cut into 1 inch slices
  • 12 grape tomatoes
  • 1 red bell pepper cut into chunks
  • 1 small red onion cut into chunks
  • Metal or bamboo skewers

Instructions

For the marinade:

  • In a bowl, mix all of the marinade ingredients together. Season with salt and pepper and stir until the salt has dissolved.

For the shrimp skewers:

  • Thread a shrimp onto skewer. Follow with squash, tomato, bell pepper, and onion. Repeat until skewer is full.
  • Once the skewers are finished, place them in a 9x13 dish and pour the marinade over the skewers. Toss the skewers to coat, cover the dish, and marinate for at least a half hour.
  • When the shrimp is marinated, light the grill on medium heat. Arrange skewers horizontally on the grill. 
  • Cook skewers approximately 4 minutes on each side, or until the shrimp is pink and cooked through and the vegetables are slightly charred.
  • Serve immediately with a side salad or rice.
