This Mojo Marinated Shrimp Skewers recipe features bright citrus flavors, lots of garlic, and the slightest bite of jalapeño in a marinade that’s perfect for grilling shrimp and veggies!

Ingredients
For the mojo marinade:
6clovesof garlicminced or grated
1limejuiced
1lemonjuiced
1large orangejuiced
1/4cupolive oil
1/2tsp.fresh oreganochopped
1/4tsp.ground cumin
1jalapeñosliced
Salt and pepperto taste
For the shrimp skewers:
1poundor 20 large peeled and deveined shrimp
1small yellow squashcut into 1 inch slices
12grape tomatoes
1red bell peppercut into chunks
1small red onioncut into chunks
Metal or bamboo skewers
Instructions
For the marinade:
In a bowl, mix all of the marinade ingredients together. Season with salt and pepper and stir until the salt has dissolved.
For the shrimp skewers:
Thread a shrimp onto skewer. Follow with squash, tomato, bell pepper, and onion. Repeat until skewer is full.
Once the skewers are finished, place them in a 9x13 dish and pour the marinade over the skewers. Toss the skewers to coat, cover the dish, and marinate for at least a half hour.
When the shrimp is marinated, light the grill on medium heat. Arrange skewers horizontally on the grill.
Cook skewers approximately 4 minutes on each side, or until the shrimp is pink and cooked through and the vegetables are slightly charred.
