Equipment

  • 1 medium mixing bowl
  • 1 large mixing bowl or stand mixer
  • 2 large baking sheets

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup unsalted butter softened
  • 1 1/4 cups Orange Mint Vanilla Infused Sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • Optional: additional infused sugar for rolling

Instructions

  • Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
  • Add flour, baking soda, baking powder, and salt to a medium mixing bowl. Mix to combine and set aside.
  • In a large mixing bowl, or stand mixer, cream the butter and infused sugar together, about 2-3 minutes, until light and fluffy.
  • Beat in the egg and vanilla extract until smooth and creamy.
  • Gradually mix the dry ingredients into the wet ingredients just until combined. The dough should be soft, but not too sticky.
  • Scoop about 1 tablespoon portions of dough and roll into balls. If desired, roll the dough balls in extra infused sugar. Place 2 inches apart on the baking sheets.
  • Bake 10-12 minutes, or until centers are set, but soft and just the slightest bit of golden brown around the edges.
  • Let cookies cool 2-3 minutes on the baking sheet. Then, allow to fully cool (on wire racks or sheets of foil) before storing or gifting.
