1 large mixing bowl or stand mixer
2 large baking sheets
Ingredients
2 1/2cupsall-purpose flour
1/2tsp.baking soda
1/2tsp.baking powder
1/2tsp.salt
1cupunsalted buttersoftened
1 1/4cupsOrange Mint Vanilla Infused Sugar
1large egg
1tsp.vanilla extract
Optional: additional infused sugarfor rolling
Instructions
Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
Add flour, baking soda, baking powder, and salt to a medium mixing bowl. Mix to combine and set aside.
In a large mixing bowl, or stand mixer, cream the butter and infused sugar together, about 2-3 minutes, until light and fluffy.
Beat in the egg and vanilla extract until smooth and creamy.
Gradually mix the dry ingredients into the wet ingredients just until combined. The dough should be soft, but not too sticky.
Scoop about 1 tablespoon portions of dough and roll into balls. If desired, roll the dough balls in extra infused sugar. Place 2 inches apart on the baking sheets.
Bake 10-12 minutes, or until centers are set, but soft and just the slightest bit of golden brown around the edges.
Let cookies cool 2-3 minutes on the baking sheet. Then, allow to fully cool (on wire racks or sheets of foil) before storing or gifting.
