Roasted Edamame Salad

This Roasted Edamame Salad is made with shelled edamame, carrots, roasted red peppers, scallions, and garlic in a rice vinegar and soy sauce dressing. It’s a colorful salad that’s full of flavor and super healthy!

Ingredients

For the salad:

  • 1 1/2 cups shelled dried edamame
  • 2 cups hot water
  • 1 cup carrot chips julienned
  • 3/4 cups roasted red peppers roughly chopped
  • 2 tbsp. scallions chopped thin
  • 1 clove garlic minced
  • Sesame seeds to garnish

For the dressing:

  • 1/4 cup olive oil
  • 1/2 cup rice vinegar or apple cider vinegar
  • 2 tsp. low sodium soy sauce
  • Pinch of sugar

Instructions

To rehydrate dried edamame:

  • Place edamame into a large bowl. Pour hot water over edamame and soak for at least 1 hour, or until edamame is ready to use.
  • Once the edamame has been rehydrated, drain and set aside.

For the salad:

  • Add the edamame, carrots, roasted red peppers, scallions, and garlic into a large mixing bowl. Stir to combine.
  • In a small bowl, add all of the dressing ingredients. Stir to combine.
  • Pour the dressing over the salad and mix.
  • Sprinkle sesame seeds on top of the salad, if desired, and serve.

Notes

Edamame is a great source of protein! It's also packed with fiber, antioxidants, and vitamin K.
