Roasted Sweet Potatoes with Sage Butter

If you're looking for one last side dish to add to your Thanksgiving menu, these Roasted Sweet Potatoes with Sage Butter are ready in 30 minutes and are full of sweet, savory, and herbaceous fall flavors!

Equipment

  • 1 large baking sheet
  • 1 medium mixing bowl
  • 1 small pot

Ingredients

  • 3-4 medium sweet potatoes peeled and cubed
  • 2 tbsps. olive oil
  • Salt and pepper to taste
  • 3 tbsps. salted butter
  • 6-8 fresh sage leaves finely chopped
  • 2 garlic cloves minced or grated

Instructions

  • Preheat oven to 425 degrees.
  • Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread evenly onto a baking sheet.
  • Roast about 30 minutes, stirring halfway, until tender and browned around edges.
  • Towards the end of roasting, melt the butter in a small pan over medium-low heat.
  • Add sage and garlic, cooking 2-3 minutes. Butter should be foamy, sage and garlic should be fragrant, and sage leaves should be crispy.
  • Remove potatoes from oven and place in mixing bowl. Toss with sage butter.
  • Add potatoes to a serving dish, garnish with fresh sage leaves, and serve.

Notes

To cook sweet potatoes in air fryer:
  1. Peel and cube potatoes, as instructed.  Then, toss with olive oil, salt, and pepper, and place in air fryer basket.
  2. Cook at 400 degrees for about 10-12 minutes, shaking basket halfway through. 
  3. Then, finish preparing as instructed above.
