Ingredients
3-4medium sweet potatoespeeled and cubed
2tbsps.olive oil
Salt and pepperto taste
3tbsps.salted butter
6-8fresh sage leavesfinely chopped
2garlic clovesminced or grated
Instructions
Preheat oven to 425 degrees.
Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread evenly onto a baking sheet.
Roast about 30 minutes, stirring halfway, until tender and browned around edges.
Towards the end of roasting, melt the butter in a small pan over medium-low heat.
Add sage and garlic, cooking 2-3 minutes. Butter should be foamy, sage and garlic should be fragrant, and sage leaves should be crispy.
Remove potatoes from oven and place in mixing bowl. Toss with sage butter.
Add potatoes to a serving dish, garnish with fresh sage leaves, and serve.
Notes
To cook sweet potatoes in air fryer:
Peel and cube potatoes, as instructed. Then, toss with olive oil, salt, and pepper, and place in air fryer basket.
Cook at 400 degrees for about 10-12 minutes, shaking basket halfway through.
