Shark Bite Chips and Fresh Salsa

This Shark Bite Chips and Fresh Salsa recipe is perfect for celebrating Shark Week. It's made with fresh tomatoes, peppers, onions, and herbs and served with blue corn tortilla chips for a fin-tastic garden-to-table summer appetizer.

Ingredients

  • 1 cup tomatoes diced
  • 1/2 cup medium green bell pepper diced
  • 1 small red onion diced
  • 1 jalapeño seeded and minced, or heatless jalapeño
  • 2 cloves garlic minced
  • 1/4 cup chopped fresh cilantro
  • 3-4 tbsps. lime juice
  • 1 tbsp. extra virgin olive oil
  • 1/4 tsp. ground cumin
  • Salt and pepper to taste
  • Blue corn tortilla chips for serving

Instructions

  • In a large mixing bowl, combine the diced tomatoes, pepper, onion, jalapeño, garlic, and cilantro.
  • In a smaller bowl, whisk the lime juice, olive oil, cumin, salt, and pepper.
  • Pour the dressing over the salsa and toss until coated.
  • Cover and chill in the fridge at least 20 minutes to allow the flavors to come together.
  • Transfer to a shallow serving bowl. Stand several tortilla chips upright throughout the salsa to resemble shark fins in the ocean.
  • Garnish salsa with extra fresh cilantro and serve immediately with extra tortilla chips on the side.
