Ingredients
1cuptomatoesdiced
1/2cupmedium green bell pepperdiced
1small red oniondiced
1jalapeñoseeded and minced, or heatless jalapeño
2clovesgarlicminced
1/4cupchopped fresh cilantro
3-4tbsps.lime juice
1tbsp.extra virgin olive oil
1/4tsp.ground cumin
Salt and pepperto taste
Blue corn tortilla chipsfor serving
Instructions
In a large mixing bowl, combine the diced tomatoes, pepper, onion, jalapeño, garlic, and cilantro.
In a smaller bowl, whisk the lime juice, olive oil, cumin, salt, and pepper.
Pour the dressing over the salsa and toss until coated.
Cover and chill in the fridge at least 20 minutes to allow the flavors to come together.
Transfer to a shallow serving bowl. Stand several tortilla chips upright throughout the salsa to resemble shark fins in the ocean.
Garnish salsa with extra fresh cilantro and serve immediately with extra tortilla chips on the side.
