Ingredients
For the Buffalo chicken
3bonelessskinless chicken breasts
1cupFrank's Red Hot Buffalo Sauce
1tbsp.unsalted butter
For the Buddha bowl
2/3cupshredded Buffalo chicken
2/3cupcooked quinoa
2/3cupcauliflowercooked or raw
1cupbaby spinach
3tbsp.blue cheese crumbles
2-3tbsp.red onionchopped
Optional: Ranch dressing
Instructions
For the Buffalo chicken
Add chicken, Buffalo sauce, and unsalted butter to a slow cooker.
Cook on low for 6-8 hours.
Shred with a fork and serve.
For the Buddha bowl
In a bowl, arrange ingredients separately.
Add quinoa, buffalo chicken, and cauliflower on one side of the bowl.
Then, arrange spinach on the other side.
Add in the red onion and spoon the blue cheese onto the middle of the bowl.
