This Slow Cooker Pineapple Teriyaki Pork Tenderloin is an easy summertime meal made with a homemade teriyaki sauce, fresh pineapple, and a Hatfield Honey Garlic Teriyaki Pork Tenderloin.

Ingredients

  • 1 tbsp. olive oil
  • 1 Hatfield Honey Garlic Teriyaki Pork Tenderloin
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup soy sauce
  • 4 tbsp. brown sugar
  • 1/4 tsp. ground ginger
  • 1 clove garlic grated or minced
  • 1 tbsp. cornstarch
  • 2 tbsp. water
  • 1/2 cup red onion chopped
  • 3 cups pineapple chunks fresh or canned (juice drained)
  • Salt and pepper to taste
  • Optional: sesame seeds chopped green onions, to garnish

Instructions

  • Heat olive oil in a skillet over medium heat. Add the pork tenderloin and sear on all sides, and place in the slow cooker.
  • In a small mixing bowl, mix the chicken broth, soy sauce, brown sugar, ginger, and garlic together to make a teriyaki sauce. Pour sauce over pork loin.
  • Make a cornstarch slurry by mixing the cornstarch and water together. Stir it into the sauce.
  • Add the pineapple chunks and onion around the pork loin.
  • Cover the slow cooker and cook on low for 8 hours.
  • Shred the pork loin and mix with the pineapple and onions before serving.
  • Serve pork loin with rice or stir-fried veggies.
