Soft and Chewy Oat and Dried Fruit Granola

This Soft and Chewy Oat and Dried Fruit Granola is the perfect combination of sweet, tart, and nutty flavors. It's made with old fashioned oats, honey, almond butter, walnuts, and a medley of delicious dried fruits.

Equipment

  • 1 8"x8" baking pan
  • 1 large mixing bowl
  • 1 small saucepan

Ingredients

  • 2 cups old fashioned oats
  • 1/2 cup golden raisins
  • 1/2 cup dried cranberries
  • 1/2 cup dried cherries
  • 1/2 cup dried blueberries
  • 1/4 cup walnuts crushed
  • 1/4 cup honey
  • 1/4 cup almond butter
  • 1 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 2 tbsps. brown sugar
  • Pinch of salt

Instructions

  • Preheat oven to 350 degrees and prepare an 8"x8" baking pan with non-stick cooking spray or parchment paper.
  • In a large mixing bowl, add the oats, raisins, cranberries, cherries, blueberries, and walnuts. Stir to combine.
  • In a small saucepan, heat the honey and almond butter over low heat until smooth.
  • Remove the pan from heat and stir in the vanilla, brown sugar, and salt.
  • Once ingredients are combined, pour the honey and almond butter mixture over the dry ingredients and stir until evenly coated.
  • Spoon the mixture into the baking pan. Use a rubber spatula or your hands to press the mixture down into the pan.
  • Bake for 20-25 minutes, or until the edges turn a light golden brown and granola feels firm to the touch.
  • Cool completely. Once cooled, break into small pieces. Store in an airtight container or jar in a cool, dry place for up to 1 month.

Notes

Instead of buying individual dried fruits, you might also be able to find a dried berry medley at the grocery store.  I found an 8 ounce container of a dried cranberry, raisin, blueberry, and cherry medley that was easy and convenient for this recipe.  I ended up adding the entire container to the recipe.
