1 - 8oz.package Neufchatel cheesesoftened
1/4cupprepared coffee
1cupplain low fat Greek yogurt
1/2tsp.vanilla extract
1/2tsp.natural sweeteneror 2 tsp. sugar
1cupdark chocolate granola
Cocoa powderfor dusting
Instructions
In a large bowl, whisk together the Neufchatel cheese and Greek yogurt until smooth.
While whisking, slowly pour in the coffee.
Stir in the vanilla and sweetener.
Begin layering the parfait in a glass. Add a layer of granola to the bottom of the glass.
Then, add some of the yogurt mixture.
Continue repeating with layers and finish with a layer of yogurt on top.
