  • 1 medium mixing bowl
  • 1 small mixing bowl

Ingredients

  • 1 cup fresh strawberries washed, hulled, and sliced
  • 1 cup fresh pineapple diced
  • 1/2 cup shredded coconut
  • 1 cup plain Greek yogurt
  • 1-2 tsp. honey
  • 1 tsp. fresh lime juice
  • Fresh mint leaves for garnish

Instructions

  • In a medium mixing bowl, combine strawberries, pineapple, and coconut.
  • In a small mixing bowl, mix Greek yogurt together with honey and lime juice.
  • Gently fold the yogurt mixture into the fruit mixture just until everything is evenly coated.
  • Chill for in fridge 15–20 minutes, if desired.
  • Serve topped with fresh mint leaves.
